- 2 Organic Purple/Red Onion sliced
- 900 g Organic Bone-In Chicken Thigh (32 ounces)
- 1 tsp Sea Salt

- 1 TBSP Organic Maple Sugar
- 2 tsp Organic Dried Thyme
- 2 tsp Sea Salt
- 1/2 tsp Organic Ground Cumin
Part 3
- 1.26 L Organic Tomato Sauce (45 ounces)
- 4 TBSP Organic Maple Sugar
- 2 TBSP Cabernet Vinegar we used O Olive Oil brand
- 2 tsp Sea Salt
- 20 drops Liquid Smoke
