Part 1
- 1 KG Organic Red Potatoes (36 ounces), medium cube, skin on
- Water
- 5 tsp Sea Salt for boiling water

- 5 TBSP Oil of Choice for Cooking divided, see directions
- 140 g Organic Carrots shredded, we used yellow to create a visual pop
- 50 g Organic Shishito Peppers sliced
- 1 tsp Sea Salt

- 2 TBSP Organic Balsamic Vinegar
- 60 mL Organic Maple Syrup

- 365 g Mayo of Choice we used Follow Your Heart Organic Egg Free Mayo
- 3/4 tsp Sea Salt
- Pinch Organic Black Pepper
