Chocolate Chip Cookies (Vegan, Gluten Free & Corn Free)

Ingredients

Flax Gel/Egg

  • 1 TBSP Golden Flax Meal
  • 2 TBSP Water

Part 1

  • 3/4 cup Organic Maple Sugar you can use less if you're sweet sensitive
  • 3 TBSP Organic Shortening OR Fat of Choice

Part 2

  • 2/3 cup Cassava Flour
  • 1/3 cup Organic Tiger Nut Flour (tuber, NOT a nut) tuber, NOT a nut
  • 1 tsp Organic Ground Vanilla OR 1/2 tsp Organic Vanilla Extract
  • 1/4 tsp Sea Salt
  • 1/4 tsp Xanthan Gum, cabbage derived Authentic Foods
  • 1/4 tsp Baking Soda

Part 3

  • 6 TBSP Water
  • 1/4 cup Chocolate Chips of Choice OR if you have a safe chocolate bar, cut it into small pieces
