Vegan Mushroom & Onion Parmesan Pasta (GF, Top 8 Free)

Ingredients

Part 1

  • 645 g Organic Yellow Onion (23 ounces), sliced
  • 6 TBSP Organic Extra Virgin Olive Oil

Part 2

  • 170 g Foraged Hedgehog Mushrooms (6 ounces), roughly choped
  • 225 g Organic Trumpet/King Trumpet Mushrooms (8 ounces), cubed
  • 2 tsp Organic Smoked Paprika
  • 1 tsp Sea Salt

Part 3

  • 70 g Organic Micro Greens Mix (2.5 ounces)
  • 60 g Organic Maple Sugar
  • 15 - 20 drops Liquid Smoke we used Lazy Kettle Brand
  • 110 - 170 g Shredded Parmesan Cheese of Choice (4 - 6 ounces) we used a dairy free cheese
