Gluten Free, Vegan Mushroom Mac-n-Cheese

Ingredients

Part 1

  • 8 TBSP Oil of Choice for Cooking we used Extra Virgin Olive Oil
  • 330 g Organic Yellow Onion (12 ounces), sliced

Part 2: 310g (11 ounces) Mushrooms of Choice. We Used:

  • 130 g Shiitake Mushrooms (5 ounces)
  • 150 g Lion’s Mane Mushroom (6 ounces)
  • 1 tsp Sea Salt

Part 3

  • 670 mL Milk of Choice (24 ounces) we used homemade oat milk
  • 5 TBSP Pasta Water from your cooked and finished pasta
  • 4 tsp Organic Garlic finely chopped/minced
  • 225 g Shredded Parmesan Cheese of Choice (8 ounces) we used Follow Your Heart
