Double Chocolate Gluten Free Muffins (Vegan, Top 8 Free)

Ingredients

Binding Agent

  • 3 TBSP Chia Seed Meal we used My Gerbs chia meal
  • 9 TBSP Water

Part 1

  • 180 g Organic Maple Sugar
  • 90 g Sorghum Flour, superfine
  • 55 g Organic Cacao Powder
  • 50 g Potato Starch
  • 40 g Organic GF PP Oat Flour, glutenfreeoats.com OR Tiger Nut Flour (tuber, NOT a nut) For oat flour, we vouch for glutenfreeoats.com
  • 30 g Arrowroot
  • 4 tsp Baking Powder
  • 1 tsp Sea Salt
  • 1/2 tsp Baking Soda

Part 2

  • 200 mL Milk of Choice (6 ounces)
  • 50 mL Organic Extra Virgin Olive Oil (2 ounces)
  • 2 tsp Organic Vanilla Extract
  • 85 mL Hot Water (3 ounces)
